Povijest destilerije De Saint-Hilaire usko je povezana s eteričnim uljem četinjača. Tradicionalno na početku i na kraju zime naši berači odlaze u regionalni park prirode Livradois-Forez u potragu za granama koje će se destilirati – pod uvjetom da ne pada kiša ili snijeg. Ove fine grane i njihove iglice koje su timovi drvosječa u početku smatrali "otpadom", zgnječit će se prije destilacije. Tada dobijemo vrlo čisto eterično ulje čiji miris neminovno podsjeća na šetnje lijepim našim krajevima!
